I'm pretty sure the only compatible OS would be yellowdog as vista definately doesn't work although i've heard of people who have apparently emulated vista with yellowdog but really the point is, is that i don't see a point in putting an os on unless you don't have a pc. For starters you have to split the hard drive into two partitions, one has to be 10gig i think and the other 50gig then you have to decide which os's (yellow dog/ps3 os) to put on which partition. My suggestion is google installing os's on ps3 and see what people have said.

But to my knowledge, itunes can only run on PCs and Macs

The PS3 has the default PS3 operating system, however you can install other Linux operating systems as well.
