It would probably look crisper. Prior to buying the LCD TV I used to have a 68cm Philips TV with Component Inputs. I tried a test with AV & Component leads, and Component definitely looked clearer & crisper. It was really noticeable when sitting in DVD menus, the text was a lot brighter and clearer than under an AV connection.
It's not just about the resolution, it's how the signal is delivered to the TV. With an AV cable, you have ALL the display signals coming via the yellow cable. With Component, the video is broken up between the Red, Green & Blue cables, meaning colours can be presented a lot better when sent via the Component cables.
A lot of people will say there is very little difference between the quality of image on Component and HDMI. HDMI has the added convenience of sending video and audio through one small cable. But ask the 'experts' over at the dtvforums and you'll get many argue that there isn't any difference in the quality of picture.
